Looking into creating the oft-used effect where an explosion can slightly ‘deafen’ the player and cause ringing in the ears. Can anyone shed any light as to whether it’s possible to apply a low pass filter across the entire mix – or, preferably, a few selected categories – while allowing it to sweep back to ‘normal’? Or, failing that, is there an alternative/better way of achieving this?

You can do this in the game using the programmer API, unfortunately the ability to put DSP effects like low pass on categories is not possible in Designer. This is a feature we have implemented for the FMOD Studio.
